Avocado & Grapefruit Salad

These days, my boyfriend and I are on a low carb diet during dinner time (at least when we eat at home).  Here is a great side dish that is flavorful and super healthy. This is an Ina Garten recipe and really good.  It went especially well with the simply grilled snapper and roasted carrots I made for dinner.  Enjoy.

For the fish, I bought local fresh snapper.  I seasoned it with freshly ground pepper and cypress flake sea salt and sauteed the fish in olive oil over high heat for 2-3 minutes on each side..

For the roasted carrots, I bought medium sized carrots with the stems on and roasted in olive oil in a 400 Degree oven for 10 minutes.  I then sprinkled them with cypress flake sea salt from Dean & Deluca.
